Actually, RC1 is the current release
The main focus of the Release Candidates is to fix all remaining bugs. There are no more database or template changes planned, so you can already start using the current release.
Also, customers have instant access to all bug fixes after I will post them on a private bugfixes forum on http://community.contentteller.com. Just register there and then add your registered username in the forums form in the members’ area.

I guess the main question is when will content teller be ready for a production environment? What is left todo in the RC0 release?

More granular control of news, posts etc
This is something that will be never easily possible with Storyteller. However, it should be quite easy to modify Contentteller to doing this though.
Yes, there is an option in the news story form to show items on the front page. Just set this to “no” and the news story in question will no longer show up on your front page
You can add additional fields with this option to the news story form. Then you can add the fields to your pages with the templates. See also http://www.esselbach.com/review4.html
We are going to end up with 5-7 different, but interated sites. These sites will for the most part be independent, but we will need to have the ability to post a story specifically on site 1 and 3 or site 2, 3, and 4. Or if it is posted to all the sites to be able to bump off, or not display it on one specific site.

Also is there a way to bump items off the front page and into the specific archive quicker than it usually does?

What is the Edit fields entry for exactly?

I mentioned this in the support ticket, but I will suggest it here...
